There is nothing wrong with pizza provided you keep dough quite thin and serve it with a lot of veggies and just minimal cheese (or no cheese). Here is the recipe for wholemeal dough.
Pizza dough
Makes - one big rectangular pizza or two smaller round ones
Prep: 25min
Rising: 1 hr
Bake: 15 min
300g – wholemeal bread flour
100g – white bread flour
220g water at room temp
1 tsp sugar
2 tsp dried instant yeast
30 olive oil
1 tsp sea salt
Tomatoe sauce – make your own or buy in the shop
Veggies of your choice – mushrooms, sweetcorn, peppers, tomatoes
- In a bowl dissolve yeast In water with sugar
- Add flours and olive oil plus salt and either knead dough with your hands in the bowl or in a special food processor
- Grease bowl with some olive oil, put the dough in and wait until it raises for one hour. Put it in the warm place covered with tea towel or cling film
- Turn the oven on to 200 degree
- Take out the dough and stretch in your hands a little bit then put on the pizza dish (sprinkle some flour on the surface so it does not stick too much) and stretch to the size. With wholemeal flour it may be more difficult to stretch it and not break it but that is ok
- Once done put tomatoe sauce on it and all the veggies you want; sprinkle with cheese if using
- Bake in the oven for 15-20 min
