Recipe: Three beans chili with guacamole and tortillas

This recipe is full of plant-based proteins. You can add soya mince if you want to and use less beans. Beans are a good source of protein and complex. Carbs. If you are not used to eating them, try with smaller amounts first so your gut can get used to them;
400g Beans – mixed – black, kidney etc
150g chickpeas
½ kg tomatoes (or one tin)
2 tbsp tomato paste
1 onion – chopped
200g- mix veggies - chopped in small pcs – carrots, celery, sweetcorn
1 red pepper – chopped in small pieces
½ tsp – smoked paprika
1 tsp – salt
¼ tsp cinnamon
Pepper to taste
Oil to fry
Guacamole
1-2 avocados
1 tomato – chopped and deseeded
1 clove garlic – minced
½ tsp salt
50g coriander
Juice from one lime
Tortillas – shop bought
- Heat some oil in the pan and fry onion for 5 min
- Add minced garlic and fry for another 2-3 min
- Add chopped veggies and fry for another 10 until tender
- Add soy mince if using and tomatoes fresh or from tin, tomato paste
- Add all the spices, season to taste and cook under cover for 15 min
Meanwhile
- Prepare guacamole – remove avocado from the skin, add all other ingredients and juice from one lemon, season to taste and mix well in a pestle and mortar or with the fork
Serve with guacamole and tortillas in a bowl
